Ingredients:
For the Stuffed Bell Peppers:
- 4 large bell peppers, any color
- 1 cup cooked rice (white or brown)
- 1 cup black beans, drained and rinsed
- 1 cup corn kernels (fresh, frozen, or canned)

- 1 teaspoon ground cumin
- 1 teaspoon chili powder

Instructions:
1. Preheat the Oven:
- Preheat your oven to 375°F (190°C).
2. Prepare the Bell Peppers:
- Cut the tops off the bell peppers and remove the seeds and membranes. Lightly brush the outside of the peppers with olive oil and place them in a baking dish.
3. Prepare the Filling:
- In a large bowl, combine cooked rice, black beans, corn, diced tomatoes, shredded cheese, red onion, cilantro, ground cumin, chili powder, salt, and pepper. Mix well until all ingredients are evenly incorporated.
4. Stuff the Peppers:
- Spoon the filling mixture into each bell pepper, packing it down gently.
5. Prepare the Tomato Sauce:
- In a small bowl, mix together crushed tomatoes, ground cumin, chili powder, salt, and pepper. Pour this sauce over and around the stuffed peppers in the baking dish.
6. Bake:
- Cover the baking dish with aluminum foil and bake in the preheated oven for 25-30 minutes or until the peppers are tender.

- If you desire a crispy top, uncover the dish and broil for an additional 3-5 minutes until the cheese on top is golden and bubbly.
