Ingredients:
For the Flank Steak:
- 1 flank steak (about 2 pounds)
- Salt and black pepper to taste
- 2 cloves garlic, minced
- 2 tablespoons olive oil
For the Filling:
- 1 cup cooked spinach, drained and chopped
- 1/2 cup roasted red bell peppers, thinly sliced
- 1/4 cup cooked carrots, finely chopped
- 1/4 cup boiled eggs, finely chopped
- 1/4 cup cooked ham, finely chopped
- 1/4 cup grated Parmesan cheese
- 2 tablespoons olive oil
- 1 teaspoon paprika
- Salt and black pepper to taste
Instructions:
Prepare the Flank Steak:
- Preheat your grill to medium-high heat, around 400-450°F (200-230°C).
- Lay the flank steak on a clean surface, and using a meat mallet, gently pound it to even out the thickness. This makes it easier to roll.
- Season both sides of the flank steak with salt, black pepper, minced garlic, and olive oil.
Prepare the Filling:
- In a bowl, combine the chopped spinach, roasted red bell peppers, cooked carrots, boiled eggs, cooked ham, grated Parmesan cheese, olive oil, paprika, salt, and black pepper. Mix well to create the filling.
Assemble the Matambre Arrollado:
- Spread the filling evenly over the entire surface of the flank steak, leaving a small border around the edges.
- Starting from one end, carefully roll the flank steak tightly around the filling, similar to rolling a jelly roll. Use kitchen twine to secure the roll at regular intervals along its length.
Grill the Matambre Arrollado:
- Place the rolled flank steak on the preheated grill. Grill it for about 20-30 minutes, turning occasionally, until it’s cooked to your desired level of doneness. The internal temperature should be around 130-135°F (55-57°C) for medium-rare.
- Once cooked, remove the matambre arrollado from the grill and let it rest for a few minutes before slicing.
Slice and Serve:
- Carefully remove the kitchen twine and slice the matambre arrollado into thick pinwheels.
