Ingredients:
For the Marinade:
- 1 pound (450g) beef sirloin, cut into thin strips
- 3 cloves garlic, minced
- 2 tablespoons soy sauce
- 1 tablespoon red wine vinegar
- 1/2 teaspoon cumin
- Salt and black pepper to taste
For the Stir-Fry:
- 2 tablespoons vegetable oil
- 1 red onion, cut into thick slices
- 2 tomatoes, cut into thick slices
- 1 yellow chili pepper, thinly sliced (optional for some heat)
- 1/4 cup beef or chicken broth
- 2 tablespoons soy sauce
- 2 tablespoons red wine vinegar
- 2 tablespoons fresh cilantro, chopped
- 1 cup French fries (cooked and ready to serve)
- Cooked white rice for serving
Instructions:
1. Marinate the Beef:
- In a bowl, combine the beef strips with the minced garlic, soy sauce, red wine vinegar, cumin, salt, and black pepper. Let it marinate for at least 20-30 minutes.
2. Prepare the French Fries:
- While the beef is marinating, prepare the French fries. You can use store-bought frozen fries or make your own. Cook them according to the package instructions until they are golden and crispy.
3. Heat a Skillet:
- In a large skillet or wok, heat the vegetable oil over high heat.
4. Sear the Beef:
- Remove the beef from the marinade and add it to the hot skillet. Sear the beef quickly, stirring constantly until it’s browned but still slightly pink in the center. Remove the beef from the skillet and set it aside.
5. Sauté Onions and Tomatoes:
- In the same skillet, add the sliced onions, tomatoes, and yellow chili pepper (if using). Sauté for a few minutes until they are slightly tender but still crisp.
6. Combine with Beef:
- Return the seared beef to the skillet with the sautéed onions and tomatoes.
7. Add Broth and Seasonings:
- Pour in the beef or chicken broth, soy sauce, and red wine vinegar. Stir well to combine all the ingredients.
8. Finish with Cilantro:
- Just before serving, add the chopped fresh cilantro and give it a final stir.
9. Serve:
- Serve the Lomo Saltado hot over a bed of cooked white rice, and top with the French fries.
