For the Pasta Dough:
- 2 cups all-purpose flour
- 3 large eggs
- 1/2 teaspoon salt
For the Filling:
- 1 cup ricotta cheese
- 1 cup fresh spinach, finely chopped
- 1/2 cup grated Parmesan cheese
- 1 egg
- 1 clove garlic, minced
- Salt and pepper to taste
For the Sauce:
- 1/2 cup unsalted butter
- 2 tablespoons fresh sage leaves
- Salt and black pepper to taste
- Grated Parmesan cheese for serving
1. Prepare the Pasta Dough:
- On a clean surface, make a mound with the flour. Create a well in the center and crack the eggs into it. Add salt. Using a fork, gradually incorporate the flour into the eggs until a dough forms. Knead the dough until smooth, then wrap it in plastic wrap and let it rest for 30 minutes.
2. Make the Filling:
- In a bowl, combine ricotta, chopped spinach, Parmesan cheese, minced garlic, and one egg. Mix well. Season with salt and pepper to taste.
3. Roll out the Pasta Dough:
- Roll out the pasta dough on a floured surface to about 1/16 inch thickness. Using a heart-shaped cookie cutter, cut out heart shapes from the dough.
4. Assemble the Ravioli:
- Place a small spoonful of the ricotta and spinach filling in the center of half of the heart shapes. Brush the edges with water and place another heart-shaped pasta on top. Press the edges to seal the ravioli, making sure to remove any air pockets.
5. Cook the Ravioli:
- Bring a large pot of salted water to a boil. Carefully add the heart-shaped ravioli and cook for about 3-4 minutes or until they float to the surface.
6. Make the Sage Butter Sauce:
- In a separate pan, melt butter over medium heat. Add fresh sage leaves and let them cook until the butter turns golden brown. Season with salt and black pepper.
- Using a slotted spoon, transfer the cooked ravioli to the sage butter sauce. Gently toss to coat.
8. Plate and Garnish:
- Plate the Heart-Shaped Ravioli and drizzle with additional sage butter sauce. Garnish with grated Parmesan cheese.
- Serve the Heart-Shaped Ravioli with Ricotta and Spinach immediately. Enjoy this delightful and romantic pasta dish!
