- 1 cup sliced mushrooms
- 1/2 cup scallions, chopped
- 1/4 cup chicken or vegetable broth (optional)
- Salt and black pepper to taste
- Chopped cilantro and sesame seeds for garnish (optional)
Instructions:
1. Prepare the Lo Mein Sauce:
- In a small bowl, whisk together the soy sauce, oyster sauce, hoisin sauce, sesame oil, rice vinegar, sugar, minced ginger, minced garlic, and red pepper flakes. Set the sauce aside.
2. Cook the Noodles:
- Cook the lo mein noodles or egg noodles according to the package instructions. Drain and set aside.
3. Sauté the Veggies:
- In a large skillet or wok, heat the vegetable oil over medium-high heat. Add the sliced bell peppers, broccoli florets, snap peas, carrots, and mushrooms. Sauté for about 5-7 minutes or until the vegetables are tender but still crisp. If needed, add chicken or vegetable broth to help steam the veggies and prevent sticking.
4. Add the Noodles:
- Add the cooked noodles to the sautéed vegetables and toss to combine.
5. Pour the Sauce:

6. Season and Garnish:
- Season with salt and black pepper to taste. Garnish with chopped scallions, cilantro, and sesame seeds if desired.
