Ingredients:
For the Potato Layers:
- 4 large yellow potatoes, peeled and diced
- 2 tablespoons ají amarillo paste (Peruvian yellow chili paste)
- 2 tablespoons vegetable oil
- Salt to taste
- Lime juice to taste
For the Chicken Filling:
- 2 cups shredded cooked chicken breast
- 1/2 cup mayonnaise
- 1 tablespoon yellow mustard
- 1 tablespoon lime juice
- Salt and black pepper to taste
For the Avocado Filling:
- 2 ripe avocados, mashed
- 1 tablespoon lime juice
- Salt to taste
For Assembly and Garnish:
- Hard-boiled eggs, sliced
- Black olives, sliced
- Fresh cilantro, chopped
Instructions:
1. Cook the Potatoes:
- Boil the diced potatoes until they are fork-tender. Drain and let them cool slightly.
2. Make Potato Mixture:
- In a bowl, mash the cooked potatoes. Add ají amarillo paste, vegetable oil, salt, and lime juice. Mix until smooth.
3. Prepare Chicken Filling:
- In another bowl, combine shredded cooked chicken, mayonnaise, yellow mustard, lime juice, salt, and black pepper. Mix until well combined.
4. Make Avocado Filling:
- In a separate bowl, mash the ripe avocados and mix with lime juice and salt.
5. Assemble the Causa:
- Line a rectangular dish with plastic wrap for easy removal. Spread half of the potato mixture evenly at the bottom.
- Add the chicken filling as the second layer and press it down gently.
- Add the avocado mixture as the third layer and press it down.
- Top with the remaining potato mixture. Smooth the surface with a spatula.
6. Chill:
- Cover the dish with plastic wrap and refrigerate for at least 2 hours to set.
7. Slice and Garnish:
- Once set, remove the causa from the refrigerator and carefully lift it out of the dish using the plastic wrap.
- Slice the causa into squares or rectangles.
8. Garnish:
- Garnish each piece with sliced hard-boiled eggs, black olives, and chopped fresh cilantro.
9. Serve:
- Serve the Peruvian Causa chilled as a delicious appetizer or light meal.
